- Glutinous rice - 150 grams
- Coconut milk - 200 ml
- Sugar - 50 grams
- Salt - 1/4 teaspoon
- Grated coconut (unsweetened) - 50 grams
- Sesame seeds (optional) - 1 tablespoon
- Fresh mango slices (for serving) - 100 grams
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- Drain the rice and steam it in a bamboo steamer or a heatproof dish over boiling water for about 20 minutes, or until it becomes tender and sticky.
- In a saucepan, combine the coconut milk, sugar, and salt, and heat gently until the sugar dissolves. Do not boil.
- Once the rice is cooked, transfer it to a mixing bowl and pour half of the coconut milk mixture over the rice, stirring well to combine. Let it sit for about 10 minutes to absorb the flavors.
- With wet hands, form the rice mixture into small balls, about the size of a golf ball.
- Roll the rice balls in the grated coconut to coat them evenly.
- Serve the coconut rice balls warm or at room temperature, drizzling the remaining coconut milk mixture on top. Garnish with sesame seeds and fresh mango slices if desired.
