Ingredients

  • Glutinous rice - 150 grams
  • Coconut milk - 200 ml
  • Sugar - 50 grams
  • Salt - 1/4 teaspoon
  • Grated coconut (unsweetened) - 50 grams
  • Sesame seeds (optional) - 1 tablespoon
  • Fresh mango slices (for serving) - 100 grams

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. Drain the rice and steam it in a bamboo steamer or a heatproof dish over boiling water for about 20 minutes, or until it becomes tender and sticky.
  3. In a saucepan, combine the coconut milk, sugar, and salt, and heat gently until the sugar dissolves. Do not boil.
  4. Once the rice is cooked, transfer it to a mixing bowl and pour half of the coconut milk mixture over the rice, stirring well to combine. Let it sit for about 10 minutes to absorb the flavors.
  5. With wet hands, form the rice mixture into small balls, about the size of a golf ball.
  6. Roll the rice balls in the grated coconut to coat them evenly.
  7. Serve the coconut rice balls warm or at room temperature, drizzling the remaining coconut milk mixture on top. Garnish with sesame seeds and fresh mango slices if desired.
