- Sugar - 1 teaspoon
- Lemongrass - 1 stalk, finely chopped
- Fresh cilantro - 2 tablespoons, chopped
- Green onions - 2, chopped
- Lime - 1, juiced
Steps
- Rinse the jasmine rice under cold water until the water runs clear to remove excess starch, then drain.
- In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, sugar, and chopped lemongrass.
- Bring the mixture to a boil over medium heat, then reduce the heat to low and cover the saucepan.
- Simmer for about 15-18 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let the rice sit, covered, for another 5 minutes.
- Fluff the rice with a fork, then stir in fresh cilantro, green onions, and lime juice before serving.
