Ingredients

  • Jasmine rice - 150 grams
  • Coconut milk - 200 ml
  • Water - 100 ml
  • Salt - 1/2 teaspoon
  • Sugar - 1 teaspoon
  • Lemongrass - 1 stalk, finely chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Green onions - 2, chopped
  • Lime - 1, juiced

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch, then drain.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, salt, sugar, and chopped lemongrass.
  3. Bring the mixture to a boil over medium heat, then reduce the heat to low and cover the saucepan.
  4. Simmer for about 15-18 minutes, or until the rice is tender and the liquid is absorbed.
  5. Remove from heat and let the rice sit, covered, for another 5 minutes.
  6. Fluff the rice with a fork, then stir in fresh cilantro, green onions, and lime juice before serving.
