Steps
- In a saucepan, combine the coconut milk, sugar, and salt over medium heat, stirring until the sugar dissolves.
- In a separate bowl, mix the rice flour and cornstarch with 100 ml of water until smooth.
- Once the coconut milk is warm, gradually add the rice flour mixture while continuously stirring to avoid lumps.
- Continue to cook the mixture on low heat, stirring constantly, until it thickens (about 5-7 minutes).
- Remove the saucepan from heat and stir in the vanilla extract.
- Pour the pudding into two serving bowls or cups and let it cool to room temperature.
