Ingredients

  • Coconut milk - 400 ml
  • Rice flour - 50 g
  • Sugar - 40 g
  • Salt - 1/4 tsp
  • Vanilla extract - 1/2 tsp
  • Cornstarch - 1 tbsp
  • Water - 100 ml

Steps

  1. In a saucepan, combine the coconut milk, sugar, and salt over medium heat, stirring until the sugar dissolves.
  2. In a separate bowl, mix the rice flour and cornstarch with 100 ml of water until smooth.
  3. Once the coconut milk is warm, gradually add the rice flour mixture while continuously stirring to avoid lumps.
  4. Continue to cook the mixture on low heat, stirring constantly, until it thickens (about 5-7 minutes).
  5. Remove the saucepan from heat and stir in the vanilla extract.
  6. Pour the pudding into two serving bowls or cups and let it cool to room temperature.
  7. Refrigerate for at least 1 hour to set before serving.
