- Sugar - 3 tablespoons
- Salt - 1/4 teaspoon
- Vanilla extract - 1/2 teaspoon
- Fresh mango - 1 small, diced (for topping)
- Toasted coconut flakes - 2 tablespoons (for garnish)
Steps
- In a small saucepan, combine coconut milk, agar-agar powder, sugar, and salt. Stir well to mix.
- Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring continuously until the agar-agar and sugar are fully dissolved.
- Once boiling, reduce the heat and simmer for about 2-3 minutes, continuing to stir.
- Remove from heat and stir in the vanilla extract.
- Pour the mixture into two small ramekins or dessert cups and let them cool at room temperature for 10 minutes.
- Once cooled, place the ramekins in the refrigerator for at least 20 minutes to set.
- Before serving, top each pudding with diced fresh mango and a sprinkle of toasted coconut flakes.
