  • Sugar - 3 tablespoons
  • Salt - 1/4 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Fresh mango - 1 small, diced (for topping)
  • Toasted coconut flakes - 2 tablespoons (for garnish)

Steps

  1. In a small saucepan, combine coconut milk, agar-agar powder, sugar, and salt. Stir well to mix.
  2. Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring continuously until the agar-agar and sugar are fully dissolved.
  3. Once boiling, reduce the heat and simmer for about 2-3 minutes, continuing to stir.
  4. Remove from heat and stir in the vanilla extract.
  5. Pour the mixture into two small ramekins or dessert cups and let them cool at room temperature for 10 minutes.
  6. Once cooled, place the ramekins in the refrigerator for at least 20 minutes to set.
  7. Before serving, top each pudding with diced fresh mango and a sprinkle of toasted coconut flakes.
