Ingredients

  • Red lentils - 100 grams
  • Coconut milk - 100 ml
  • Thai red curry paste - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 tablespoon, grated
  • Shallot - 1, finely chopped
  • Carrot - 1, grated
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Chickpea flour - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut oil - 2 tablespoons (for frying)
  • Burger buns - 2
  • Lettuce leaves - 2
  • Sliced cucumber - 1/2
  • Sliced tomato - 1

Steps

  1. Rinse the red lentils under cold water until the water runs clear, then soak them in water for about 15 minutes.
  2. In a saucepan, combine soaked lentils and coconut milk, bring to a boil, then reduce heat and simmer for 10-15 minutes until lentils are soft and the mixture thickens.
  3. In a skillet, heat 1 tablespoon of coconut oil over medium heat. Add minced garlic, grated ginger, and chopped shallot, sauté until fragrant and shallots are translucent.
  4. Stir in grated carrot, coriander, cumin, and Thai red curry paste. Cook for another 3-4 minutes until the vegetables are well coated with spices.
  5. Combine the lentil mixture with the sautéed vegetables in a bowl. Add chickpea flour, salt, and black pepper, mixing until well combined. Let the mixture cool for a few minutes.
  6. Form the lentil mixture into two burger patties.
  7. In the same skillet, add the remaining tablespoon of coconut oil over medium heat. Fry the patties for about 4-5 minutes on each side until golden brown and crispy.
  8. Assemble the burgers by placing each patty on a bun, topping with lettuce, cucumber, and tomato slices. Serve immediately.
