Ingredients
- Red lentils - 100 grams
- Coconut milk - 100 ml
- Thai red curry paste - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh ginger - 1 tablespoon, grated
- Shallot - 1, finely chopped
- Carrot - 1, grated
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Chickpea flour - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut oil - 2 tablespoons (for frying)
- Burger buns - 2
- Lettuce leaves - 2
- Sliced cucumber - 1/2
- Sliced tomato - 1
Steps
- Rinse the red lentils under cold water until the water runs clear, then soak them in water for about 15 minutes.
- In a saucepan, combine soaked lentils and coconut milk, bring to a boil, then reduce heat and simmer for 10-15 minutes until lentils are soft and the mixture thickens.
- In a skillet, heat 1 tablespoon of coconut oil over medium heat. Add minced garlic, grated ginger, and chopped shallot, sauté until fragrant and shallots are translucent.
- Stir in grated carrot, coriander, cumin, and Thai red curry paste. Cook for another 3-4 minutes until the vegetables are well coated with spices.
- Combine the lentil mixture with the sautéed vegetables in a bowl. Add chickpea flour, salt, and black pepper, mixing until well combined. Let the mixture cool for a few minutes.
- Form the lentil mixture into two burger patties.
- In the same skillet, add the remaining tablespoon of coconut oil over medium heat. Fry the patties for about 4-5 minutes on each side until golden brown and crispy.
- Assemble the burgers by placing each patty on a bun, topping with lettuce, cucumber, and tomato slices. Serve immediately.
