Ingredients

  • Chickpeas - 200 grams (cooked)
  • Coconut milk - 100 ml
  • Red curry paste - 2 tablespoons
  • Garlic - 2 cloves (minced)
  • Ginger - 1 tablespoon (grated)
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons (chopped)
  • Oats - 50 grams (rolled)
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1 (sliced)
  • Cucumber - 1/2 (sliced)

Steps

  1. In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth.
  2. Add coconut milk, red curry paste, minced garlic, grated ginger, lime juice, chopped cilantro, oats, salt, and pepper to the mashed chickpeas. Mix until well combined.
  3. Form the mixture into two burger patties.
  4. Heat a non-stick pan over medium heat and lightly grease it. Cook the patties for about 5-6 minutes on each side until golden brown.
  5. Toast the burger buns in the same pan for 1-2 minutes until lightly crispy.
  6. Assemble the burgers by placing a lettuce leaf on each bun, followed by the cooked patty, tomato slices, and cucumber slices. Top with the other half of the bun.
  7. Serve immediately with your favorite dipping sauce, if desired.
