Ingredients
- Chickpeas - 200 grams (cooked)
- Coconut milk - 100 ml
- Red curry paste - 2 tablespoons
- Garlic - 2 cloves (minced)
- Ginger - 1 tablespoon (grated)
- Lime juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons (chopped)
- Oats - 50 grams (rolled)
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 (sliced)
- Cucumber - 1/2 (sliced)
Steps
- In a large bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth.
- Add coconut milk, red curry paste, minced garlic, grated ginger, lime juice, chopped cilantro, oats, salt, and pepper to the mashed chickpeas. Mix until well combined.
- Form the mixture into two burger patties.
- Heat a non-stick pan over medium heat and lightly grease it. Cook the patties for about 5-6 minutes on each side until golden brown.
- Toast the burger buns in the same pan for 1-2 minutes until lightly crispy.
- Assemble the burgers by placing a lettuce leaf on each bun, followed by the cooked patty, tomato slices, and cucumber slices. Top with the other half of the bun.
- Serve immediately with your favorite dipping sauce, if desired.
