Ingredients

  • Chicken breast - 250 grams
  • Coconut milk - 100 ml
  • Thai red curry paste - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced
  • Sriracha sauce - to taste

Steps

  1. In a bowl, combine the chicken breast, coconut milk, Thai red curry paste, minced garlic, grated ginger, lime juice, chopped cilantro, salt, and black pepper. Mix well and let marinate for 15 minutes.
  2. Preheat a grill or skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center.
  3. While the chicken is cooking, prepare the burger buns by toasting them lightly on the grill or in a toaster.
  4. Once the chicken is cooked, remove it from the heat and let it rest for a couple of minutes before slicing it into thick pieces.
  5. Assemble the burgers by placing a lettuce leaf on each bun, followed by the sliced chicken, tomato, and cucumber. Drizzle with Sriracha sauce to taste, then top with the other half of the bun.
