- Chicken breast - 250 grams
- Coconut milk - 100 ml
- Thai red curry paste - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Lime juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole grain burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
- Sriracha sauce - to taste
Steps
- In a bowl, combine the chicken breast, coconut milk, Thai red curry paste, minced garlic, grated ginger, lime juice, chopped cilantro, salt, and black pepper. Mix well and let marinate for 15 minutes.
- Preheat a grill or skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center.
- While the chicken is cooking, prepare the burger buns by toasting them lightly on the grill or in a toaster.
- Once the chicken is cooked, remove it from the heat and let it rest for a couple of minutes before slicing it into thick pieces.
- Assemble the burgers by placing a lettuce leaf on each bun, followed by the sliced chicken, tomato, and cucumber. Drizzle with Sriracha sauce to taste, then top with the other half of the bun.
- Serve immediately with a side of fresh vegetables or a light salad.
