Ingredients
- Sticky rice - 100 grams
- Coconut milk - 200 ml
- Sugar - 30 grams
- Salt - 1/4 teaspoon
- Pandan leaves (optional) - 2 leaves
- Sesame seeds (for garnish) - 1 tablespoon
Steps
- Rinse the sticky rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
- After soaking, drain the rice and place it in a steamer lined with cheesecloth or a clean kitchen towel. If using pandan leaves, tie them into a knot and place them on top of the rice.
- Steam the rice over boiling water for about 20-25 minutes, or until the grains are translucent and tender.
- While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar dissolves, then remove from heat.
- Once the sticky rice is done steaming, transfer it to a mixing bowl and gently fold in about 150 ml of the sweetened coconut milk mixture, reserving the rest for serving later. Allow the rice to absorb the coconut milk for about 10 minutes.
- Grease a small cake pan or dish with a little coconut milk, then pack the sticky rice mixture firmly into the pan to form an even layer.
- Let it cool to room temperature, then refrigerate for at least 30 minutes to set.
- Once set, cut the coconut and sticky rice cake into squares or rectangles. Drizzle the reserved coconut milk on top and garnish with sesame seeds before serving.
