Ingredients

  • Sticky rice - 150 grams
  • Coconut milk - 200 ml
  • Durian flesh - 100 grams
  • Sugar - 30 grams
  • Salt - 1/4 teaspoon
  • Sesame seeds (optional) - 1 tablespoon

Steps

  1. Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. After soaking, drain the rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 20-25 minutes, or until tender.
  3. While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over low heat. Stir until the sugar dissolves and the mixture is warm, but do not boil.
  4. Once the rice is cooked, transfer it to a mixing bowl and pour about 150 ml of the warm coconut milk mixture over it. Stir gently to combine and let it sit for 10 minutes to absorb the flavors.
  5. In the meantime, prepare the durian by removing the flesh from the seeds and mashing it slightly with a fork if desired.
  6. To serve, place a portion of the sticky rice on a plate, top it with a generous scoop of mashed durian, and drizzle with the remaining coconut milk mixture. Sprinkle sesame seeds on top if using.
