Ingredients
- Sticky rice - 150 grams
- Coconut milk - 200 ml
- Durian flesh - 100 grams
- Sugar - 30 grams
- Salt - 1/4 teaspoon
- Sesame seeds (optional) - 1 tablespoon
Steps
- Rinse the sticky rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- After soaking, drain the rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 20-25 minutes, or until tender.
- While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over low heat. Stir until the sugar dissolves and the mixture is warm, but do not boil.
- Once the rice is cooked, transfer it to a mixing bowl and pour about 150 ml of the warm coconut milk mixture over it. Stir gently to combine and let it sit for 10 minutes to absorb the flavors.
- In the meantime, prepare the durian by removing the flesh from the seeds and mashing it slightly with a fork if desired.
- To serve, place a portion of the sticky rice on a plate, top it with a generous scoop of mashed durian, and drizzle with the remaining coconut milk mixture. Sprinkle sesame seeds on top if using.
