Ingredients

  • ripe bananas - 2 medium
  • rice flour - 100 grams
  • coconut flakes - 50 grams
  • coconut milk - 100 ml
  • sugar - 30 grams
  • baking powder - 1 teaspoon
  • salt - a pinch
  • coconut oil - for frying

Steps

  1. In a mixing bowl, mash the ripe bananas until smooth.
  2. Add the rice flour, coconut flakes, coconut milk, sugar, baking powder, and salt to the mashed bananas. Mix well until you have a thick batter.
  3. Heat coconut oil in a frying pan over medium heat.
  4. Once the oil is hot, spoon dollops of the batter into the pan, flattening them slightly to form fritters.
  5. Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.
  6. Remove the fritters from the oil and drain them on paper towels to remove excess oil.
  7. Serve warm, optionally with a sprinkle of coconut flakes on top.
