- ripe bananas - 2 medium
- rice flour - 100 grams
- coconut flakes - 50 grams
- coconut milk - 100 ml
- sugar - 30 grams
- baking powder - 1 teaspoon
- salt - a pinch
- coconut oil - for frying
Steps
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the rice flour, coconut flakes, coconut milk, sugar, baking powder, and salt to the mashed bananas. Mix well until you have a thick batter.
- Heat coconut oil in a frying pan over medium heat.
- Once the oil is hot, spoon dollops of the batter into the pan, flattening them slightly to form fritters.
- Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.
- Remove the fritters from the oil and drain them on paper towels to remove excess oil.
- Serve warm, optionally with a sprinkle of coconut flakes on top.
