Ingredients

  • Jasmine rice - 1 cup (200g)
  • Water - 2 cups (500ml)
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Shallot - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Frozen peas - 1/2 cup (75g)
  • Chili paste (Nam Prik Pao) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Cilantro - 1/4 cup, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then combine the rice with 2 cups of water in a pot. Bring to a boil, reduce heat to low, cover, and simmer for 15-18 minutes until water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  2. Heat the vegetable oil in a large skillet or wok over medium heat. Add the minced garlic and chopped shallot, sautéing for 2-3 minutes until fragrant and translucent.
  3. Add the diced carrot and green bell pepper to the skillet, cooking for another 3-4 minutes until they start to soften.
  4. Stir in the frozen peas, cooked rice, chili paste, soy sauce, and lime juice. Mix well to ensure the rice is coated with the chili paste and all ingredients are evenly distributed.
  5. Cook for an additional 3-4 minutes, stirring frequently. Season with salt and black pepper to taste.
