- Zucchini - 1 medium, julienned
- Bell pepper - 1 medium, thinly sliced
- Carrot - 1 medium, julienned
- Fresh cilantro - ¼ cup, chopped
- Lime juice - 2 tablespoons
- Soy sauce - 2 tablespoons (low sodium)
- Salt - to taste
- Black pepper - to taste
- Lime zest - 1 teaspoon
Steps
- Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red chili flakes, sautéing for about 1 minute until fragrant.
- Add the julienned zucchini, bell pepper, and carrot to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
- Add the cooked pasta to the skillet, along with the lime juice, soy sauce, lime zest, salt, and black pepper. Toss everything together until well combined and heated through, about 2-3 minutes.
