  • Zucchini - 1 medium, julienned
  • Bell pepper - 1 medium, thinly sliced
  • Carrot - 1 medium, julienned
  • Fresh cilantro - ¼ cup, chopped
  • Lime juice - 2 tablespoons
  • Soy sauce - 2 tablespoons (low sodium)
  • Salt - to taste
  • Black pepper - to taste
  • Lime zest - 1 teaspoon

Steps

  1. Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red chili flakes, sautéing for about 1 minute until fragrant.
  3. Add the julienned zucchini, bell pepper, and carrot to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
  4. Add the cooked pasta to the skillet, along with the lime juice, soy sauce, lime zest, salt, and black pepper. Toss everything together until well combined and heated through, about 2-3 minutes.
