Ingredients

  • Rice noodles - 200 grams
  • Fresh lime juice - 3 tablespoons
  • Lime zest - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Red chili flakes - 1 teaspoon (adjust to taste)
  • Soy sauce - 2 tablespoons
  • Maple syrup - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Fresh cilantro - 30 grams, chopped
  • Green onions - 2, sliced
  • Bell pepper - 1 medium, thinly sliced
  • Carrot - 1 medium, julienned
  • Peanut butter - 1 tablespoon (optional for creaminess)
  • Salt - to taste
  • Water - 1 liter (for boiling noodles)

Steps

  1. In a pot, bring 1 liter of water to a boil and cook the rice noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. In a large mixing bowl, combine the fresh lime juice, lime zest, minced garlic, red chili flakes, soy sauce, maple syrup, and sesame oil. Whisk until well combined.
  3. Add the cooked noodles to the mixing bowl along with the sliced bell pepper, julienned carrot, chopped cilantro, and sliced green onions. Toss everything together until the noodles are evenly coated with the sauce.
  4. If using, drizzle in the peanut butter and mix well until incorporated.
