Ingredients

  • Chickpeas - 200 grams, cooked
  • Lemongrass - 1 stalk, finely chopped
  • Red chili - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cilantro - 2 tablespoons, chopped
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Oats - 50 grams, ground
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon (for cooking)
  • Burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced

Steps

  1. In a large bowl, mash the cooked chickpeas with a fork until they are mostly smooth but still have some texture.
  2. Add the chopped lemongrass, red chili, minced garlic, grated ginger, chopped cilantro, soy sauce, lime juice, ground oats, salt, and black pepper to the mashed chickpeas. Mix well until all ingredients are combined.
  3. Divide the mixture into two equal portions and shape each portion into a burger patty.
  4. Heat the olive oil in a non-stick skillet over medium heat. Once hot, add the burger patties and cook for about 4-5 minutes on each side, or until golden brown and heated through.
  5. While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a burger patty, a slice of tomato, and cucumber. Top with the other half of the bun.
