Ingredients

  • Chickpeas - 400 grams (canned, drained and rinsed)
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 30 grams, chopped
  • Thai red curry paste - 1 tablespoon
  • Chili jam - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Breadcrumbs - 50 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons (for frying)
  • Burger buns - 2, preferably whole grain
  • Cucumber - 1 small, thinly sliced
  • Carrot - 1 small, grated
  • Lettuce leaves - 2
  • Mayonnaise - 2 tablespoons (optional, for serving)

Steps

  1. In a large bowl, mash the drained chickpeas using a fork or potato masher until mostly smooth, leaving some texture.
  2. Add the finely chopped red onion, minced garlic, chopped cilantro, Thai red curry paste, chili jam, lime juice, breadcrumbs, salt, and black pepper to the bowl. Mix well until fully combined.
  3. Divide the mixture into two equal portions and form into patties.
  4. Heat the vegetable oil in a non-stick skillet over medium heat. Add the patties and cook for 4-5 minutes on each side until golden brown and heated through.
  5. While the patties are cooking, prepare the slaw by mixing the grated carrot and cucumber in a bowl.
  6. To assemble the burgers, place a lettuce leaf on the bottom half of each burger bun, add the cooked patty, top with slaw, and spread mayonnaise if desired. Place the top half of the bun on the burger.
  7. Serve immediately while warm.
