Ingredients
- Firm tofu - 250 grams
- Coconut milk - 400 ml
- Vegetable oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Turmeric powder - 1 teaspoon
- Curry powder - 1 tablespoon
- Red bell pepper - 1 medium, sliced
- Green beans - 100 grams, trimmed and cut into 2-inch pieces
- Spinach - 100 grams, washed
- Soy sauce - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander - for garnish
Steps
- Press the tofu for 15 minutes to remove excess water, then cut into 1-inch cubes.
- Heat 1 tablespoon of vegetable oil in a non-stick pan over medium heat. Add the tofu cubes and fry until golden brown on all sides. Remove and set aside.
- In the same pan, add the remaining tablespoon of oil, then add the chopped onion. Sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the turmeric powder and curry powder, stirring to combine, and cook for 1-2 minutes.
- Pour in the coconut milk and bring to a gentle simmer. Add the soy sauce, salt, and black pepper to taste.
- Add the sliced red bell pepper and green beans, cooking for 5-7 minutes until the vegetables are tender but still vibrant.
- Stir in the spinach and cooked tofu, allowing everything to heat through for another 2-3 minutes.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh coriander.
