Ingredients

  • Firm tofu - 250 grams
  • Coconut milk - 400 ml
  • Vegetable oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Turmeric powder - 1 teaspoon
  • Curry powder - 1 tablespoon
  • Red bell pepper - 1 medium, sliced
  • Green beans - 100 grams, trimmed and cut into 2-inch pieces
  • Spinach - 100 grams, washed
  • Soy sauce - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - for garnish

Steps

  1. Press the tofu for 15 minutes to remove excess water, then cut into 1-inch cubes.
  2. Heat 1 tablespoon of vegetable oil in a non-stick pan over medium heat. Add the tofu cubes and fry until golden brown on all sides. Remove and set aside.
  3. In the same pan, add the remaining tablespoon of oil, then add the chopped onion. Sauté until translucent, about 3-4 minutes.
  4. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  5. Add the turmeric powder and curry powder, stirring to combine, and cook for 1-2 minutes.
  6. Pour in the coconut milk and bring to a gentle simmer. Add the soy sauce, salt, and black pepper to taste.
  7. Add the sliced red bell pepper and green beans, cooking for 5-7 minutes until the vegetables are tender but still vibrant.
  8. Stir in the spinach and cooked tofu, allowing everything to heat through for another 2-3 minutes.
  9. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh coriander.
