Ingredients
- Pork shoulder - 250 grams
- Garlic - 2 cloves, minced
- Shallots - 1 medium, minced
- Fish sauce - 2 tablespoons
- Brown sugar - 1 tablespoon
- Black pepper - 1 teaspoon
- Sesame oil - 1 teaspoon
- Burger buns - 2 pieces
- Cucumber - 1/2, thinly sliced
- Carrot - 1/2, julienned
- Daikon radish - 1/4, julienned
- Fresh cilantro - 1/4 cup, chopped
- Mint leaves - 1/4 cup, chopped
- Mayonnaise - 2 tablespoons
- Sriracha - 1 tablespoon
- Lime - 1, cut into wedges
Steps
- In a bowl, combine minced garlic, shallots, fish sauce, brown sugar, black pepper, and sesame oil to create a marinade.
- Cut the pork shoulder into thin slices and add to the marinade, ensuring each piece is well-coated. Marinate for at least 15 minutes.
- Meanwhile, prepare the pickled vegetables by mixing the julienned carrot and daikon radish in a bowl with a pinch of salt and a splash of vinegar. Let sit for 10 minutes.
- Heat a grill or skillet over medium-high heat. Cook the marinated pork slices for about 3-4 minutes on each side until fully cooked and slightly charred.
- While the pork is cooking, prepare the burger buns by toasting them lightly on the grill or in a toaster.
- Assemble the burgers by spreading mayonnaise on the bottom bun, adding the cooked pork, and topping with cucumber slices, pickled vegetables, cilantro, and mint.
- Drizzle with sriracha, top with the other half of the bun, and serve with lime wedges.
