Ingredients
- Zucchini - 2 medium, spiralized
- Beef sirloin - 200 grams, thinly sliced
- Chicken broth - 500 ml, low-sodium
- Coconut aminos - 3 tablespoons
- Fish sauce - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Thai basil - 1/4 cup, fresh leaves
- Cilantro - 1/4 cup, fresh leaves
- Lime - 1, juiced
- Red chili flakes - 1/2 teaspoon
- Green onions - 2, chopped
- Coconut oil - 1 tablespoon
Steps
- Heat coconut oil in a large pot over medium heat.
- Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the thinly sliced beef sirloin to the pot and cook until browned, about 3-4 minutes.
- Pour in the chicken broth, coconut aminos, and fish sauce, stirring well.
- Bring the mixture to a simmer, then reduce heat to low and let it cook for 10 minutes.
- In the final minutes of cooking, add the spiralized zucchini to the pot and stir gently.
- Once the zucchini is slightly tender, remove the pot from heat and stir in lime juice, red chili flakes, and half of the Thai basil and cilantro.
- Serve the boat noodles in bowls, garnished with the remaining herbs and chopped green onions.
