Ingredients

  • Zucchini - 2 medium, spiralized
  • Beef sirloin - 200 grams, thinly sliced
  • Chicken broth - 500 ml, low-sodium
  • Coconut aminos - 3 tablespoons
  • Fish sauce - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Thai basil - 1/4 cup, fresh leaves
  • Cilantro - 1/4 cup, fresh leaves
  • Lime - 1, juiced
  • Red chili flakes - 1/2 teaspoon
  • Green onions - 2, chopped
  • Coconut oil - 1 tablespoon

Steps

  1. Heat coconut oil in a large pot over medium heat.
  2. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  3. Add the thinly sliced beef sirloin to the pot and cook until browned, about 3-4 minutes.
  4. Pour in the chicken broth, coconut aminos, and fish sauce, stirring well.
  5. Bring the mixture to a simmer, then reduce heat to low and let it cook for 10 minutes.
  6. In the final minutes of cooking, add the spiralized zucchini to the pot and stir gently.
  7. Once the zucchini is slightly tender, remove the pot from heat and stir in lime juice, red chili flakes, and half of the Thai basil and cilantro.
  8. Serve the boat noodles in bowls, garnished with the remaining herbs and chopped green onions.
