Ingredients
- Gluten-free all-purpose flour - 100 grams
- Water - 60 ml
- Banana - 1 large, ripe
- Coconut milk - 100 ml
- Sugar - 2 tablespoons
- Salt - a pinch
- Oil (for frying) - 2 tablespoons
- Sesame seeds (optional) - 1 tablespoon
Steps
- In a mixing bowl, combine the gluten-free flour and a pinch of salt. Gradually add the water while stirring until a smooth dough forms.
- Knead the dough for a few minutes until it becomes soft and pliable. Cover with a damp cloth and let it rest for 10 minutes.
- While the dough is resting, mash the ripe banana in a bowl and set aside.
- Divide the dough into two equal pieces and roll each piece into a thin circle on a lightly floured surface.
- Heat 1 tablespoon of oil in a frying pan over medium heat. Place the first roti in the pan and cook for about 2-3 minutes until golden brown.
- Flip the roti, add half of the mashed banana in the center, and fold the roti over to enclose the filling. Cook for another 2-3 minutes until golden on both sides. Remove and keep warm.
- Repeat the process for the second roti.
- In a small saucepan, combine the coconut milk and sugar. Heat over low heat until the sugar dissolves. Do not boil.
- Serve the banana roti warm, drizzled with the sweet coconut sauce, and sprinkle with sesame seeds if desired.
