- Ripe bananas - 2 medium
- Coconut flour - 50 grams
- Coconut milk - 100 ml
- Honey - 1 tablespoon
- Baking soda - 1/2 teaspoon
- Salt - a pinch
- Vanilla extract - 1/2 teaspoon
- Banana leaves - 2 pieces (for wrapping)
Steps
- Preheat the steamer or prepare a pot with boiling water.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add coconut flour, coconut milk, honey, baking soda, salt, and vanilla extract to the mashed bananas. Mix until well combined.
- Cut the banana leaves into squares large enough to hold the batter. Lightly soften the leaves by briefly passing them over an open flame or steaming them for a minute.
- Spoon the banana batter onto the center of each banana leaf square, folding the leaves over to create a parcel.
- Place the parcels in the steamer and steam for about 30 minutes until set.
- Remove from the steamer and let cool slightly before unwrapping. Serve warm.
