Steps

  1. Peel the ripe bananas and mash them in a bowl until smooth.
  2. In another bowl, mix the all-purpose flour, rice flour, sugar, baking powder, and salt together.
  3. Add the mashed bananas, coconut milk, and vanilla extract to the dry ingredients. Stir until well combined and a thick batter forms.
  4. Heat coconut oil in a frying pan over medium heat, ensuring there is enough oil to cover the bottom of the pan.
  5. Once the oil is hot, drop spoonfuls of the batter into the oil, flattening them slightly to form fritters.
