- Whole wheat pizza crust - 1 medium (about 250g)
- Cooked Bamee noodles - 150g
- Cooked chicken breast, shredded - 150g
- Eggs - 2 large
- Green onion, chopped - 2 tablespoons
- Bean sprouts - 50g
- Red bell pepper, sliced - 1/2 medium
- Peanut butter - 2 tablespoons
- Soy sauce - 3 tablespoons
- Lime juice - 1 tablespoon
- Garlic, minced - 1 clove
- Crushed peanuts - 2 tablespoons
- Fresh cilantro, chopped - 2 tablespoons
- Olive oil - 1 tablespoon
- Chili flakes (optional) - to taste
Steps
- Preheat the oven to 220°C (428°F).
- In a pan, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add the cooked chicken, Bamee noodles, and red bell pepper. Stir-fry for about 3-4 minutes until the bell pepper is slightly tender.
- In a small bowl, mix peanut butter, soy sauce, and lime juice until smooth. Add this sauce to the pan and stir well to combine with the noodles and chicken.
- Push the mixture to one side of the pan and crack the eggs into the other side, scrambling them until fully cooked. Mix everything together and add chopped green onion and bean sprouts. Remove from heat.
- Roll out the whole wheat pizza crust on a floured surface and place it on a baking tray.
- Spread the noodle and chicken mixture evenly over the pizza crust.
- Bake in the preheated oven for 12-15 minutes or until the crust is golden and crispy.
- Once out of the oven, sprinkle crushed peanuts and fresh cilantro over the top. Add chili flakes if desired.
- Slice the pizza and serve hot.
