Ingredients

  • Firm tofu - 300 grams
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Maple syrup - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ground ginger - 1 teaspoon
  • Curry powder - 1 teaspoon
  • Coconut oil - 1 tablespoon
  • Peanut butter - 3 tablespoons
  • Coconut milk - 100 ml
  • Chili sauce - 1 tablespoon (optional)
  • Salt - to taste
  • Sesame seeds - 1 tablespoon (for garnish)
  • Fresh cilantro - a handful (for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Press the tofu to remove excess moisture, then cut it into 2 cm cubes.
  3. In a bowl, combine soy sauce, lime juice, maple syrup, minced garlic, ground ginger, and curry powder. Add the tofu cubes and marinate for at least 15 minutes.
  4. Skewer the marinated tofu cubes onto wooden or metal skewers, leaving some space between each piece.
  5. Place the skewers on a baking sheet lined with parchment paper. Brush them lightly with coconut oil.
  6. Bake in the preheated oven for 20-25 minutes, turning halfway through, until golden and slightly crispy.
  7. While the tofu is baking, prepare the peanut sauce by whisking together peanut butter, coconut milk, chili sauce (if using), and salt in a small saucepan over low heat until smooth.
  8. Once the tofu is done, remove it from the oven and let it cool slightly. Serve the skewers drizzled with peanut sauce, and garnish with sesame seeds and fresh cilantro.
