Ingredients

  • Rice noodles - 150 grams
  • Coconut milk - 200 ml
  • Soy sauce - 2 tablespoons
  • Peanut butter - 2 tablespoons
  • Maple syrup - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Green onions - 2, chopped
  • Cilantro - 2 tablespoons, chopped
  • Chili flakes - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the rice noodles according to package instructions until al dente, then drain and set aside.
  3. In a mixing bowl, whisk together coconut milk, soy sauce, peanut butter, maple syrup, lime juice, ginger, garlic, chili flakes, salt, and pepper until smooth.
  4. In a large bowl, combine the cooked noodles, carrot, bell pepper, and green onions.
  5. Pour the coconut milk mixture over the noodle mixture and toss until everything is well coated.
  6. Transfer the mixture to a baking dish and spread it evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is slightly golden and the vegetables are tender.
  8. Remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro and sesame seeds before serving.
