- Fresh cilantro - 30 grams
- Fresh mint - 30 grams
- Fresh Thai basil - 30 grams
- Green onions - 2 stalks
- Garlic - 2 cloves
- Red chili - 1, finely chopped
- Chickpea flour - 100 grams
- Rice flour - 50 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 150 milliliters
- Vegetable oil - 2 tablespoons (for greasing)
Steps
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, finely chop the cilantro, mint, Thai basil, green onions, garlic, and red chili.
- Add the chickpea flour, rice flour, baking powder, salt, and black pepper to the bowl. Mix well to combine the dry and fresh ingredients.
- Gradually add water to the mixture, stirring until a thick batter forms. The batter should hold together but not be too dry.
- Using a spoon or ice cream scoop, drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 5 cm apart.
- Brush the tops of the fritters lightly with vegetable oil to help with browning.
- Bake in the preheated oven for 20-25 minutes, or until the fritters are golden brown and crispy on the edges.
- Once done, remove from the oven and let them cool for a few minutes before serving. Enjoy with your favorite dipping sauce!
