- Puff pastry - 250 grams
- Olive oil - 1 tablespoon
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 small, diced
- Green peas - 50 grams, fresh or frozen
- Thai red curry paste - 2 tablespoons
- Coconut milk - 100 ml
- Lime juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Egg - 1, for egg wash (optional)
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the diced carrot and bell pepper, cooking for another 5 minutes until they begin to soften.
- Stir in the green peas and Thai red curry paste, mixing well to combine, then pour in the coconut milk. Cook for an additional 5 minutes, allowing the flavors to meld. Remove from heat.
- Stir in lime juice, chopped cilantro, and season with salt and pepper to taste. Let the filling cool slightly.
- Roll out the puff pastry on a floured surface and cut into circles (about 10 cm in diameter).
- Place a tablespoon of the curry filling in the center of each pastry circle. Fold the pastry over to create a half-moon shape and seal the edges by pressing with a fork.
- If using, beat the egg and brush the mixture over the tops of the pastries for a golden finish.
- Place the curry puffs on a baking sheet lined with parchment paper and bake in the preheated oven for 20-25 minutes or until golden brown.
- Remove from the oven and allow to cool slightly before serving.
