Ingredients

  • Jasmine rice - 1 cup
  • Vegetable broth - 1 1/2 cups
  • Fresh Thai basil leaves - 1/2 cup, chopped
  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Green onion - 2, sliced
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Red chili flakes - 1/2 teaspoon (optional)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lime - 1, cut into wedges for serving

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  3. In a medium saucepan, combine the rinsed rice and vegetable broth. Bring to a boil over medium-high heat.
  4. Once boiling, reduce the heat to low, cover, and simmer for 10 minutes until the rice absorbs most of the liquid.
  5. In a large mixing bowl, combine the partially cooked rice with chopped Thai basil, diced bell pepper, diced carrot, sliced green onion, minced garlic, soy sauce, sesame oil, red chili flakes (if using), salt, and black pepper. Mix well.
  6. Transfer the rice mixture into a greased baking dish, spreading it evenly.
  7. Cover the dish with aluminum foil and bake for 20 minutes.
  8. After 20 minutes, remove the foil and bake for an additional 5 minutes to allow the top to crisp slightly.
  9. Remove from the oven and let it sit for 5 minutes before serving.
  10. Serve warm with lime wedges on the side.
