  • Firm tofu - 200 grams, cubed
  • Red bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 medium, sliced
  • Garlic - 3 cloves, minced
  • Soy sauce - 2 tablespoons
  • Coconut sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Chili flakes - 1 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine cubed tofu, red bell pepper, carrot, zucchini, minced garlic, soy sauce, coconut sugar, lime juice, olive oil, chili flakes, salt, and black pepper.
  3. Gently toss the ingredients until evenly coated.
