Ingredients

  • Taro - 200 grams, peeled and cubed
  • Coconut milk - 200 ml
  • Sugar - 50 grams
  • Cornstarch - 20 grams
  • Salt - 1/4 teaspoon
  • Vanilla extract - 1 teaspoon
  • Eggs - 2 large
  • Water - 200 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Steam the cubed taro for about 15-20 minutes until tender, then let it cool slightly.
  3. In a blender, combine the steamed taro, coconut milk, sugar, cornstarch, salt, vanilla extract, and eggs. Blend until smooth.
  4. Add water to the mixture and blend again until well combined.
  5. Pour the mixture into a greased baking dish or individual ramekins.
  6. Bake in the preheated oven for 30-35 minutes, or until the custard is set and a toothpick inserted in the center comes out clean.
  7. Remove from the oven and allow to cool for a few minutes before serving.
