Ingredients

  • Taro - 300 grams, peeled and diced
  • Rice flour - 50 grams
  • Coconut milk - 100 ml
  • Green onions - 2 stalks, finely chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Lemongrass - 1 stalk, finely minced
  • Garlic - 2 cloves, minced
  • Turmeric powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chili flakes - 1/4 teaspoon (optional)
  • Lime juice - 1 tablespoon
  • Olive oil - 1 tablespoon (for greasing)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Steam the diced taro for about 15 minutes or until soft, then mash it in a bowl.
  3. Add rice flour, coconut milk, green onions, cilantro, lemongrass, garlic, turmeric, salt, black pepper, chili flakes, and lime juice to the mashed taro. Mix until well combined.
  4. Grease a baking tray with olive oil and shape the taro mixture into small cakes, placing them on the tray.
  5. Bake in the preheated oven for 25-30 minutes or until the cakes are golden brown, flipping halfway through for even cooking.
  6. Remove from the oven and let cool for a few minutes before serving.
