- Taro - 300 grams, peeled and diced
- Rice flour - 50 grams
- Coconut milk - 100 ml
- Green onions - 2 stalks, finely chopped
- Fresh cilantro - 2 tablespoons, chopped
- Lemongrass - 1 stalk, finely minced
- Garlic - 2 cloves, minced
- Turmeric powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chili flakes - 1/4 teaspoon (optional)
- Lime juice - 1 tablespoon
- Olive oil - 1 tablespoon (for greasing)
Steps
- Preheat the oven to 180°C (350°F).
- Steam the diced taro for about 15 minutes or until soft, then mash it in a bowl.
- Add rice flour, coconut milk, green onions, cilantro, lemongrass, garlic, turmeric, salt, black pepper, chili flakes, and lime juice to the mashed taro. Mix until well combined.
- Grease a baking tray with olive oil and shape the taro mixture into small cakes, placing them on the tray.
- Bake in the preheated oven for 25-30 minutes or until the cakes are golden brown, flipping halfway through for even cooking.
- Remove from the oven and let cool for a few minutes before serving.
