- Sweet potatoes - 2 medium (about 400g)
- Coconut milk - 200ml
- Lime juice - 2 tablespoons
- Brown sugar - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Thai red curry paste - 1 tablespoon
- Salt - 1/2 teaspoon
- Fresh cilantro - for garnish (optional)
- Chili flakes - for garnish (optional)
Steps
- Preheat your oven to 200°C (400°F).
- Wash and pierce the sweet potatoes several times with a fork, then place them on a baking tray.
- Bake the sweet potatoes in the preheated oven for 45-50 minutes, or until soft and cooked through.
- While the sweet potatoes are baking, prepare the coconut-lime sauce by combining coconut milk, lime juice, brown sugar, minced garlic, grated ginger, Thai red curry paste, and salt in a small saucepan over medium heat.
