Ingredients

  • Sweet potatoes - 2 medium (about 400g)
  • Coconut milk - 200ml
  • Lime juice - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Thai red curry paste - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Fresh cilantro - for garnish (optional)
  • Chili flakes - for garnish (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash and pierce the sweet potatoes several times with a fork, then place them on a baking tray.
  3. Bake the sweet potatoes in the preheated oven for 45-50 minutes, or until soft and cooked through.
  4. While the sweet potatoes are baking, prepare the coconut-lime sauce by combining coconut milk, lime juice, brown sugar, minced garlic, grated ginger, Thai red curry paste, and salt in a small saucepan over medium heat.
  5. Stir the sauce until it is well combined and heated through, then remove from heat.
  6. Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes.
  7. Cut the sweet potatoes in half lengthwise and fluff the insides with a fork.
  8. Drizzle the coconut-lime sauce generously over the sweet potatoes.
