Steps
- Preheat the oven to 180°C (350°F).
- Cook the jasmine rice according to package instructions and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced carrot, red bell pepper, and green peas to the skillet. Cook for about 5 minutes until the vegetables are tender.
- Stir in the cooked rice, diced pineapple, green onions, soy sauce, curry powder, salt, and black pepper. Mix well to combine all ingredients evenly.
- Transfer the rice mixture into a lightly greased baking dish and spread it evenly.
