Ingredients

  • Jasmine rice - 150 grams
  • Pineapple (fresh, diced) - 150 grams
  • Carrot (diced) - 50 grams
  • Green peas - 50 grams
  • Red bell pepper (diced) - 50 grams
  • Green onion (sliced) - 2 stalks
  • Garlic (minced) - 2 cloves
  • Soy sauce - 30 ml
  • Curry powder - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Cashews (chopped) - 30 grams
  • Salt - to taste
  • Black pepper - to taste
  • Lime wedges - for serving

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the jasmine rice according to package instructions and set aside.
  3. In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the diced carrot, red bell pepper, and green peas to the skillet. Cook for about 5 minutes until the vegetables are tender.
  5. Stir in the cooked rice, diced pineapple, green onions, soy sauce, curry powder, salt, and black pepper. Mix well to combine all ingredients evenly.
  6. Transfer the rice mixture into a lightly greased baking dish and spread it evenly.
  7. Sprinkle the chopped cashews on top of the rice mixture.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  9. Remove the foil and bake for an additional 10 minutes to allow the top to crisp up.
