Ingredients
- All-purpose flour - 200 grams
- Unsalted butter - 50 grams, cold and cubed
- Salt - 1/2 teaspoon
- Cold water - 60 milliliters
- Potatoes - 200 grams, peeled and diced
- Carrot - 50 grams, finely chopped
- Green peas - 50 grams (fresh or frozen)
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Curry powder - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - 1/2 teaspoon (for filling)
- Black pepper - 1/4 teaspoon
- Egg - 1, beaten (for egg wash)
Steps
- Preheat your oven to 200°C (400°F).
- In a large bowl, combine the all-purpose flour and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
- Gradually add the cold water, mixing until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
- While the dough is chilling, boil the diced potatoes in salted water until tender, about 10 minutes. Drain and set aside.
- In a frying pan, heat the vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the diced carrots and green peas, cooking for another 3-4 minutes, then add the boiled potatoes, curry powder, salt, and black pepper. Mix well and cook for an additional 2 minutes. Remove from heat and let cool.
- On a lightly floured surface, roll out the chilled dough to about 3mm thick. Cut out 10 cm circles using a cookie cutter or a glass.
- Place a tablespoon of the filling in the center of each circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
- Brush the tops of the curry puffs with the beaten egg to give them a golden color when baked.
- Place the puffs on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown. Serve warm.
