Ingredients

  • All-purpose flour - 200 grams
  • Unsalted butter - 50 grams, cold and cubed
  • Salt - 1/2 teaspoon
  • Cold water - 60 milliliters
  • Potatoes - 200 grams, peeled and diced
  • Carrot - 50 grams, finely chopped
  • Green peas - 50 grams (fresh or frozen)
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Curry powder - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - 1/2 teaspoon (for filling)
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten (for egg wash)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine the all-purpose flour and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add the cold water, mixing until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  4. While the dough is chilling, boil the diced potatoes in salted water until tender, about 10 minutes. Drain and set aside.
  5. In a frying pan, heat the vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  6. Add the diced carrots and green peas, cooking for another 3-4 minutes, then add the boiled potatoes, curry powder, salt, and black pepper. Mix well and cook for an additional 2 minutes. Remove from heat and let cool.
  7. On a lightly floured surface, roll out the chilled dough to about 3mm thick. Cut out 10 cm circles using a cookie cutter or a glass.
  8. Place a tablespoon of the filling in the center of each circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.
  9. Brush the tops of the curry puffs with the beaten egg to give them a golden color when baked.
  10. Place the puffs on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown. Serve warm.
