Ingredients

  • Coconut milk - 200 ml
  • Eggs - 2 large
  • Sugar - 50 g
  • Vanilla extract - 1 tsp
  • Cornstarch - 1 tbsp
  • Salt - a pinch
  • Grated coconut (unsweetened) - 2 tbsp
  • Butter (for greasing) - 1 tsp

Steps

  1. Preheat the oven to 180°C (350°F) and grease two ramekins with butter.
  2. In a mixing bowl, whisk together the eggs, sugar, and salt until combined.
  3. Add the coconut milk, vanilla extract, and cornstarch to the egg mixture and whisk until smooth.
  4. Pour the mixture evenly into the prepared ramekins.
  5. Sprinkle grated coconut on top of each ramekin.
  6. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  7. Bake in the preheated oven for about 40-45 minutes, or until the custard is set and a toothpick comes out clean.
  8. Remove from the oven and let cool for a few minutes before serving.
