- Coconut milk - 200 ml
- Eggs - 2 large
- Sugar - 50 g
- Vanilla extract - 1 tsp
- Cornstarch - 1 tbsp
- Salt - a pinch
- Grated coconut (unsweetened) - 2 tbsp
- Butter (for greasing) - 1 tsp
Steps
- Preheat the oven to 180°C (350°F) and grease two ramekins with butter.
- In a mixing bowl, whisk together the eggs, sugar, and salt until combined.
- Add the coconut milk, vanilla extract, and cornstarch to the egg mixture and whisk until smooth.
- Pour the mixture evenly into the prepared ramekins.
- Sprinkle grated coconut on top of each ramekin.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for about 40-45 minutes, or until the custard is set and a toothpick comes out clean.
- Remove from the oven and let cool for a few minutes before serving.
