Ingredients

  • Jasmine rice - 150 grams

  • Pandan leaves - 4 leaves (tied in a knot)
  • Salt - 1/2 teaspoon
  • Coconut milk - 100 milliliters
  • Sugar - 1 tablespoon
  • Sesame seeds (toasted) - 1 tablespoon
  • Chopped peanuts (optional) - 1 tablespoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium pot, combine the rinsed rice, water, salt, and tied pandan leaves.
  3. Bring the mixture to a boil over medium-high heat, then reduce to low, cover, and simmer for 15-20 minutes, or until the rice is fully cooked and water is absorbed.
  4. While the rice is cooking, prepare the coconut sauce by combining coconut milk and sugar in a small saucepan over low heat. Stir until the sugar is dissolved, then remove from heat.
  5. Once the rice is done, remove the pandan leaves and fluff the rice gently with a fork.
  6. Serve the rice in bowls, drizzling the sweetened coconut milk over the top.
  7. Garnish with toasted sesame seeds and chopped peanuts if desired.
