- Zucchini - 300 grams, grated
- Egg - 1 large
- Almond flour - 50 grams
- Parmesan cheese - 30 grams, grated
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons for frying
Steps
- Grate the zucchini and place it in a clean kitchen towel or cheesecloth. Squeeze out excess moisture to ensure the fritters are crispy.
- In a mixing bowl, combine the grated zucchini, egg, almond flour, grated Parmesan cheese, minced garlic, chopped parsley, salt, and black pepper. Mix until well combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Scoop about 2 tablespoons of the zucchini mixture and shape it into a patty. Place it in the skillet and flatten slightly. Repeat with the remaining mixture.
- Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Add more olive oil if needed between batches.
- Once cooked, remove the fritters from the skillet and place them on a paper towel to absorb excess oil.
- Serve warm, garnished with additional parsley or a dollop of Greek yogurt if desired.
