Ingredients

  • Zucchini - 300 grams, grated
  • Egg - 1 large
  • Almond flour - 50 grams
  • Parmesan cheese - 30 grams, grated
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons for frying

Steps

  1. Grate the zucchini and place it in a clean kitchen towel or cheesecloth. Squeeze out excess moisture to ensure the fritters are crispy.
  2. In a mixing bowl, combine the grated zucchini, egg, almond flour, grated Parmesan cheese, minced garlic, chopped parsley, salt, and black pepper. Mix until well combined.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  4. Scoop about 2 tablespoons of the zucchini mixture and shape it into a patty. Place it in the skillet and flatten slightly. Repeat with the remaining mixture.
  5. Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Add more olive oil if needed between batches.
  6. Once cooked, remove the fritters from the skillet and place them on a paper towel to absorb excess oil.
  7. Serve warm, garnished with additional parsley or a dollop of Greek yogurt if desired.
