  • Fresh parsley - 2 tablespoons, chopped
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon (15ml)

Steps

  1. Preheat a grill or grill pan over medium-high heat.
  2. Wash the zucchini and slice them into 1 cm thick rounds.
  3. In a large bowl, combine the olive oil, minced garlic, smoked paprika, salt, black pepper, and lemon juice.
  4. Add the zucchini rounds to the bowl and toss them until well coated with the marinade.
  5. Place the zucchini slices on the hot grill and cook for about 4-5 minutes on each side, or until they are tender and have nice grill marks.
