- Shrimp - 150 grams, peeled and deveined
- Squid - 150 grams, cleaned and sliced
- Mussels - 150 grams, cleaned
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Heat the olive oil in a large pan over medium heat. Add the minced garlic and diced onion, sautéing until translucent.
- Add the diced red bell pepper and cook for another 3-4 minutes until softened.
- Stir in the halved cherry tomatoes, cooking until they start to break down, about 5 minutes.
- Pour in the fish stock and bring to a simmer. Add the paprika, saffron, salt, and black pepper, allowing the flavors to meld for about 5 minutes.
- Add the shrimp, squid, and mussels to the pan, cover, and cook for another 5-7 minutes until the seafood is cooked through and the mussels have opened.
- Taste and adjust seasoning as necessary, then remove from heat.
- Serve hot, garnished with chopped parsley.
