- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Peel and cut the carrots into sticks, about 1 cm thick.
- In a large bowl, combine the olive oil, smoked paprika, garlic powder, cumin, salt, and black pepper.
- Add the carrot sticks to the bowl and toss until they are well coated with the spice mixture.
- Spread the carrots in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through.
- Remove from the oven and drizzle with lemon juice, then sprinkle with chopped parsley before serving.
