- Carrots - 300 grams
- Extra virgin olive oil - 2 tablespoons
- Red wine vinegar - 1 tablespoon
- Garlic - 1 clove, minced
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped
Steps
- Peel the carrots and cut them into thin sticks or rounds, about 5 cm long.
- In a pot of boiling water, blanch the carrot sticks for 3-4 minutes until slightly tender but still crisp.
- Drain the carrots and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for about 5 minutes.
- In a separate bowl, whisk together the olive oil, red wine vinegar, minced garlic, paprika, salt, and black pepper.
- Remove the carrots from the ice water, drain well, and pat dry with a kitchen towel.
- Add the cooled carrots to the dressing and toss to coat evenly.
- Cover the bowl with plastic wrap and let the carrots marinate in the refrigerator for at least 10 minutes before serving.
- Garnish with fresh parsley before serving.
