Ingredients

  • Carrots - 300 grams
  • Extra virgin olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Peel the carrots and cut them into thin sticks or rounds, about 5 cm long.
  2. In a pot of boiling water, blanch the carrot sticks for 3-4 minutes until slightly tender but still crisp.
  3. Drain the carrots and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for about 5 minutes.
  4. In a separate bowl, whisk together the olive oil, red wine vinegar, minced garlic, paprika, salt, and black pepper.
  5. Remove the carrots from the ice water, drain well, and pat dry with a kitchen towel.
  6. Add the cooled carrots to the dressing and toss to coat evenly.
  7. Cover the bowl with plastic wrap and let the carrots marinate in the refrigerator for at least 10 minutes before serving.
  8. Garnish with fresh parsley before serving.
