Ingredients

  • Zucchini - 100g
  • Carrot - 100g
  • Red Bell Pepper - 100g
  • Broccoli Florets - 100g
  • All-Purpose Flour - 60g
  • Cornstarch - 40g
  • Cold Water - 120ml
  • Salt - 1/2 tsp
  • Black Pepper - 1/4 tsp
  • Olive Oil - for frying

Steps

  1. Prepare the vegetables by washing and cutting them into bite-sized pieces: slice the zucchini and carrot into thin rounds, cut the red bell pepper into strips, and separate the broccoli into florets.
  2. In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper.
  3. Gradually whisk in the cold water until the batter is smooth. It should be thick enough to coat the vegetables.
  4. Heat a generous amount of olive oil in a deep pan over medium-high heat until hot.
  5. Dip each vegetable piece into the batter, allowing any excess to drip off, then carefully place them into the hot oil.
  6. Fry the vegetables in batches for about 2-3 minutes, or until golden brown and crispy. Ensure not to overcrowd the pan.
  7. Use a slotted spoon to remove the fried vegetables and place them on a plate lined with paper towels to absorb excess oil.
  8. Serve immediately with a sprinkle of salt and your favorite dipping sauce.
