Ingredients
- Zucchini - 100g
- Carrot - 100g
- Red Bell Pepper - 100g
- Broccoli Florets - 100g
- All-Purpose Flour - 60g
- Cornstarch - 40g
- Cold Water - 120ml
- Salt - 1/2 tsp
- Black Pepper - 1/4 tsp
- Olive Oil - for frying
Steps
- Prepare the vegetables by washing and cutting them into bite-sized pieces: slice the zucchini and carrot into thin rounds, cut the red bell pepper into strips, and separate the broccoli into florets.
- In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper.
- Gradually whisk in the cold water until the batter is smooth. It should be thick enough to coat the vegetables.
- Heat a generous amount of olive oil in a deep pan over medium-high heat until hot.
- Dip each vegetable piece into the batter, allowing any excess to drip off, then carefully place them into the hot oil.
- Fry the vegetables in batches for about 2-3 minutes, or until golden brown and crispy. Ensure not to overcrowd the pan.
- Use a slotted spoon to remove the fried vegetables and place them on a plate lined with paper towels to absorb excess oil.
- Serve immediately with a sprinkle of salt and your favorite dipping sauce.
