- Red bell pepper - 1 medium (150g)
- Zucchini - 1 medium (200g)
- Eggplant - 1 small (150g)
- Red onion - 1 medium (100g)
- Garlic - 2 cloves
- Olive oil - 2 tablespoons (30ml)
- Smoked paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat your oven to 200°C (400°F).
- Wash and cut the red bell pepper, zucchini, eggplant, and red onion into bite-sized pieces.
- Mince the garlic cloves.
- In a large bowl, combine the chopped vegetables, minced garlic, olive oil, smoked paprika, salt, and black pepper. Toss until all the vegetables are evenly coated.
- Spread the vegetable mixture evenly on a baking sheet lined with parchment paper.
- Roast the vegetables in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized, stirring halfway through for even cooking.
- Once done, remove from the oven and sprinkle with fresh chopped parsley before serving.
