Ingredients

  • Red bell pepper - 1 medium (150g)
  • Zucchini - 1 medium (200g)
  • Eggplant - 1 small (150g)
  • Red onion - 1 medium (100g)
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons (30ml)
  • Smoked paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash and cut the red bell pepper, zucchini, eggplant, and red onion into bite-sized pieces.
  3. Mince the garlic cloves.
  4. In a large bowl, combine the chopped vegetables, minced garlic, olive oil, smoked paprika, salt, and black pepper. Toss until all the vegetables are evenly coated.
  5. Spread the vegetable mixture evenly on a baking sheet lined with parchment paper.
  6. Roast the vegetables in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized, stirring halfway through for even cooking.
  7. Once done, remove from the oven and sprinkle with fresh chopped parsley before serving.
