Ingredients

  • Broccoli - 150 grams
  • Carrots - 100 grams
  • Zucchini - 100 grams
  • Red bell pepper - 50 grams
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Lemon juice - 1 tablespoon
  • Salt - to taste

Steps

  1. Prepare the vegetables by washing and cutting the broccoli into florets, slicing the carrots into thin rounds, and cutting the zucchini and red bell pepper into bite-sized pieces.
  2. Fill a pot with water and bring it to a boil. Place a steamer basket over the pot, making sure it does not touch the water, and add all the prepared vegetables.
  3. Cover the pot and steam the vegetables for about 8-10 minutes, or until they are tender but still crisp.
  4. In a small bowl, mix the olive oil, minced garlic, lemon juice, salt, and black pepper.
  5. Once the vegetables are steamed, transfer them to a serving bowl and drizzle the garlic-lemon dressing over them. Toss gently to combine.
  6. Garnish with freshly chopped parsley and serve immediately.
