  • Eggplant - 150 grams
  • Red onion - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons (chopped)

Steps

  1. Preheat a grill or grill pan over medium-high heat.
  2. Wash and slice the zucchini, red bell pepper, yellow bell pepper, eggplant, and red onion into 1-2 cm thick pieces.
  3. In a large bowl, combine the sliced vegetables with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss well to coat all vegetables evenly.
  4. Place the seasoned vegetables on the grill. Cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
