- Eggplant - 150 grams
- Red onion - 100 grams
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons (chopped)
Steps
- Preheat a grill or grill pan over medium-high heat.
- Wash and slice the zucchini, red bell pepper, yellow bell pepper, eggplant, and red onion into 1-2 cm thick pieces.
- In a large bowl, combine the sliced vegetables with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss well to coat all vegetables evenly.
- Place the seasoned vegetables on the grill. Cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
