  • Portobello mushrooms - 150 grams
  • Red onion - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Smoked paprika - 1 teaspoon
  • Sea salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Preheat a grill pan or outdoor grill over medium-high heat.
  2. Wash and slice the zucchini, bell peppers, portobello mushrooms, and red onion into even pieces.
  3. In a large bowl, combine the sliced vegetables with olive oil, minced garlic, smoked paprika, sea salt, and black pepper. Toss well to ensure all vegetables are evenly coated.
  4. Place the seasoned vegetables on the preheated grill, cooking for about 5-7 minutes per side, or until they are tender and have nice grill marks.
