- Portobello mushrooms - 150 grams
- Red onion - 100 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Smoked paprika - 1 teaspoon
- Sea salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Preheat a grill pan or outdoor grill over medium-high heat.
- Wash and slice the zucchini, bell peppers, portobello mushrooms, and red onion into even pieces.
- In a large bowl, combine the sliced vegetables with olive oil, minced garlic, smoked paprika, sea salt, and black pepper. Toss well to ensure all vegetables are evenly coated.
- Place the seasoned vegetables on the preheated grill, cooking for about 5-7 minutes per side, or until they are tender and have nice grill marks.
