  • Red bell pepper - 150 grams
  • Yellow bell pepper - 150 grams
  • Eggplant - 200 grams
  • Asparagus - 100 grams
  • Olive oil - 3 tablespoons
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the grill to medium-high heat.
  2. Wash and slice the zucchini, red and yellow bell peppers, and eggplant into 1-2 cm thick slices.
  3. Trim the asparagus and set aside.
  4. In a large bowl, combine the sliced vegetables with olive oil, smoked paprika, garlic powder, salt, and black pepper. Toss until evenly coated.
  5. Place the vegetables on the grill and cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
