  • Salt - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Plant-based milk - 200 ml
  • Olive oil - 2 tablespoons
  • Chopped fresh cilantro - 2 tablespoons
  • Chopped fresh chives - 2 tablespoons

Steps

  1. In a large mixing bowl, combine the corn flour, all-purpose flour, baking powder, salt, and ground cumin.
  2. In a separate bowl, whisk together the plant-based milk and olive oil until well combined.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined; avoid over-mixing.
  4. Fold in the chopped cilantro and chives until evenly distributed in the batter.
  5. Heat a non-stick skillet over medium heat and lightly grease it with a little olive oil.
  6. Pour about 1/4 cup of the batter onto the skillet for each tortita, cooking for about 3-4 minutes on one side until bubbles form on the surface.
  7. Flip the tortitas and cook for an additional 2-3 minutes on the other side until golden brown.
  8. Remove from the skillet and keep warm while you repeat with the remaining batter.
  9. Serve the tortitas warm with your choice of avocado, salsa, or a sprinkle of nutritional yeast.
