- Chopped fresh cilantro - 2 tablespoons
- Chopped fresh chives - 2 tablespoons
Steps
- In a large mixing bowl, combine the corn flour, all-purpose flour, baking powder, salt, and ground cumin.
- In a separate bowl, whisk together the plant-based milk and olive oil until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined; avoid over-mixing.
- Fold in the chopped cilantro and chives until evenly distributed in the batter.
- Heat a non-stick skillet over medium heat and lightly grease it with a little olive oil.
- Pour about 1/4 cup of the batter onto the skillet for each tortita, cooking for about 3-4 minutes on one side until bubbles form on the surface.
- Flip the tortitas and cook for an additional 2-3 minutes on the other side until golden brown.
- Remove from the skillet and keep warm while you repeat with the remaining batter.
