- Zucchini - 250 grams
- All-purpose flour - 50 grams
- Egg - 1 large
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Baking powder - 1/2 teaspoon
- Olive oil - for frying
Steps
- Grate the zucchini using a box grater or food processor and place it in a clean kitchen towel. Squeeze out excess moisture from the grated zucchini.
- In a mixing bowl, combine the grated zucchini, flour, egg, minced garlic, chopped parsley, salt, black pepper, and baking powder. Mix until well combined.
- Heat a non-stick skillet over medium heat and add a tablespoon of olive oil.
- Spoon about 2 tablespoons of the zucchini mixture into the skillet, flattening it slightly to form a patty. Repeat with the remaining mixture, cooking 2-3 patties at a time.
- Fry the patties for about 3-4 minutes on each side, or until golden brown and crispy. Add more oil as needed between batches.
- Once cooked, transfer the tortitas to a paper towel-lined plate to absorb excess oil. Serve warm.
