  • Almond milk - 100 ml

  • Nutmeg - 1/4 teaspoon
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Coconut oil - for cooking

Steps

  1. In a blender, combine rolled oats, banana, eggs, almond milk, cinnamon, nutmeg, baking powder, and vanilla extract. Blend until smooth.
  2. Heat a non-stick skillet over medium heat and add a small amount of coconut oil.
  3. Pour 1/4 cup of the batter onto the skillet for each pancake. Cook for 3-4 minutes until bubbles form on the surface.
  4. Flip the pancakes and cook for an additional 2-3 minutes until golden brown.
  5. Repeat with the remaining batter, adding more coconut oil to the skillet as needed.
