  • baking powder - 1 tsp
  • salt - 1/4 tsp
  • olive oil - 2 tbsp
  • honey or maple syrup - 1 tbsp (optional)

Steps

  1. In a large mixing bowl, combine the cooked brown rice, whole wheat flour, baking powder, and salt.
  2. In another bowl, whisk together the egg, milk, and honey or maple syrup (if using).
  3. Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.
  4. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake, cooking until bubbles form on the surface, about 2-3 minutes.
  6. Flip the pancakes and cook for an additional 2-3 minutes until golden brown.
  7. Repeat with remaining batter, adding more oil as needed.
  8. Serve warm topped with fresh fruits and a drizzle of honey or syrup if desired.
