Steps
- In a large mixing bowl, combine the cooked brown rice, whole wheat flour, baking powder, and salt.
- In another bowl, whisk together the egg, milk, and honey or maple syrup (if using).
- Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Pour about 1/4 cup of batter onto the skillet for each pancake, cooking until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook for an additional 2-3 minutes until golden brown.
- Repeat with remaining batter, adding more oil as needed.
- Serve warm topped with fresh fruits and a drizzle of honey or syrup if desired.
